Biochemical Quality Evaluation of Different Varieties of Sapota at Ambient Storage

Abstract

The investigation was conducted to evaluate biochemical changes of different varieties of sapota at ambient storage. Fifteen varieties viz. Kalipatti, Cricket Ball, DHS-1, DHS-1 selection, DHS-2, PKM1, PKM-3, PKM-4, CO-1, CO-2, CO-3, Virudhunagar, Kirthibarti, Cricket Ball selection (ARS-A) and Cricket Ball (Udupi) were studied under Ghataprabha command area conditions. The delayed increase in TSS and sugars over the storage period in the DHS1, DHS-1 selection, CO-1, Cricket Ball, DHS-2, PKM3, PKM-4 and CO-2 whereas, faster increase in TSS and sugar was observed in Kalipatti, PKM-1, CO-3, Virudhunagar, Kirthibarthi, Cricket Ball selection (ARSA) and Cricket Ball (Udupi). The slow decrease in acidity and ascorbic acid over the storage period was in DHS-1, DHS-1 selection, CO-1, Cricket Ball, DHS-2, PKM-3, PKM-4 and CO-2. Whereas, faster decrease in acidity and ascorbic acid was observed in Kalipatti, PKM-1, CO-3, Virudhunagar, Kirthibarthi, Cricket Ball selection (ARSA) and Cricket Ball (Udupi).
