Online published on 15 December, 2016. Abstract The investigation was conducted to evaluate biochemical changes of different varieties of sapota at ambient storage. Fifteen varieties viz. Kalipatti, Cricket Ball, DHS-1, DHS-1 selection, DHS-2, PKM1, PKM-3, PKM-4, CO-1, CO-2, CO-3, Virudhunagar, Kirthibarti, Cricket Ball selection (ARS-A) and Cricket Ball (Udupi) were studied under Ghataprabha command area conditions. The delayed increase in TSS and sugars over the storage period in the DHS1, DHS-1 selection, CO-1, Cricket Ball, DHS-2, PKM3, PKM-4 and CO-2 whereas, faster increase in TSS and sugar was observed in Kalipatti, PKM-1, CO-3, Virudhunagar, Kirthibarthi, Cricket Ball selection (ARSA) and Cricket Ball (Udupi). The slow decrease in acidity and ascorbic acid over the storage period was in DHS-1, DHS-1 selection, CO-1, Cricket Ball, DHS-2, PKM-3, PKM-4 and CO-2. Whereas, faster decrease in acidity and ascorbic acid was observed in Kalipatti, PKM-1, CO-3, Virudhunagar, Kirthibarthi, Cricket Ball selection (ARSA) and Cricket Ball (Udupi).
