Packaging and Storage Study of Dried Marigold Flowers

Abstract

Storage of dried marigold petals using a microwave assisted convective dryer (MACD) at 210W microwave power, 60°C air temperature and 0.5 m/s air velocity and Hot air (HA) drying at 60°C air temperature and 0.5 m/s air velocity were packed in low density polyethylene (200 gauge) and aluminium foil lined polyethylene. The packed materials were stored at room temperature for a period of 75 days. The product was subjected to analysis at an interval of 15 days for retention of lutein, total antioxidant activity, total colour change (e), browning index, chroma and water activity. Using M.A.C.D. dried marigold petals packed in aluminium foil lined polyethylene was found to be best in terms of retention of quality during storage period.
