Abstract

A study was conducted to evaluate the preservative effect of Marigold flower petal extract in paneer for extending shelf life, in this study the Marigold petal extract in the concentration of 0.5, 1.0, 2.0, 5.0 ml from the standard extract solution (50 mg/ml) were incorporated for the experiment. The sample C with 2ml of Marigold petal extract extended the shelf life of paneer and therefore can be recommended for preservation of paneer up to one month in refrigerated condition.
